Adam’s Mom’s Meat Loaf Recipe
2 lbs. lean beef, ground
1 tsp. salt (or less to taste)
¼ tsp. pepper
2 eggs
½ c. bread crumbs
½ c. tomato sauce (from a 15 oz can)
¼ c. chopped onion
¼ tsp. ea dried basil, marjoram, rosemary, sage (or any combination you like)
Preheat oven to 350°F
Mix all ingredients together thoroughly, using your hands. (If you prefer to use a spoon, beat the eggs slightly before adding.)
Pack into a lightly greased or non-stick loaf pan (ideally a meat loaf pan), or form into a loaf on a baking sheet; top with remaining tomato sauce from the can.
Bake for 1 hour, or until the loaf shrinks slightly from the sides of the pan.
